Italian-style grilled butternut squash

Ingredients

  • ½ butternut squash
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 4 sprigs oregano, leaves removed
  • 4 sprigs basil, leaves removed
  • 4 tablespoons grated Parmesan cheese
  • ½ teaspoon finely grated orange zest
  • 2 tablespoons olive oil
  • 4 tablespoons pine nuts
  • Salt and pepper

 

Preparation

  • Peel the squash, remove the seeds, and cut the squash into pieces. Steam the squash cubes for 5 minutes.
  • Heat the griddle over medium heat.
  • Peel and mince the garlic.
  • Pour the oil onto the griddle and add the squash. Sauté until almost completely cooked. Turn the griddle to fairly high heat.
  • Add the garlic and half of the oregano, and continue cooking until the squash is cooked through. Be careful not to let it fall apart.
  • Place the butternut squash on a plate and sprinkle with the remaining oregano and basil, orange zest, and coarsely chopped pine nuts. Finish by sprinkling with Parmesan cheese.
