Italian-style grilled butternut squash

Ingredients
- ½ butternut squash
- 2 cloves garlic
- 2 tablespoons lemon juice
- 4 sprigs oregano, leaves removed
- 4 sprigs basil, leaves removed
- 4 tablespoons grated Parmesan cheese
- ½ teaspoon finely grated orange zest
- 2 tablespoons olive oil
- 4 tablespoons pine nuts
- Salt and pepper
Preparation
- Peel the squash, remove the seeds, and cut the squash into pieces. Steam the squash cubes for 5 minutes.
- Heat the griddle over medium heat.
- Peel and mince the garlic.
- Pour the oil onto the griddle and add the squash. Sauté until almost completely cooked. Turn the griddle to fairly high heat.
- Add the garlic and half of the oregano, and continue cooking until the squash is cooked through. Be careful not to let it fall apart.
- Place the butternut squash on a plate and sprinkle with the remaining oregano and basil, orange zest, and coarsely chopped pine nuts. Finish by sprinkling with Parmesan cheese.
