Asparagus salad with eggs

INGREDIENTS

  • 1 bunch of green asparagus
  • 2 hard-boiled eggs
  • 6 sliced pickles
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Salt and pepper

 

INSTRUCTIONS

1. Cook the asparagus in a salted water saucepan for 4 to 5 mns, they must remain very firm. Drain and brush lightly with olive oil. On the plancha over fairly high heat, grill them,  flipping them quite often.
2. Crush the eggs through a strainer.
3. Place the grilled asparagus in a dish, add the balsamic vinegar, the eggs and the pickles. Salt and pepper to taste.

 

TIP

Feel free to cook this recipe using white and green asparagus.
