Grilled pineapple with coconut cream

INGREDIENTS

  • 8 fresh pineapple slices
  • 8 tbsp powdered sugar
  • 3,5 tbsp or 5 cl rum
  • 1 tsp or 10 g melted coconut oil
  • 6 tbsp or 10 cl coconut cream
  • 2 Thaï basil stems

 

INSTRUCTIONS

  1. Preheat your griddle on fairly high heat.
    2. Brush the pineapple slices with the coconut oil, then place them on the plancha .
    3. Let brown on both sides, then sprinkle with half of the sugar. Turn the slices, let caramelize quickly; the repeat on the other side.
    4. While the pineapple slices caramelize, in a small saucepan, heat the rum.
  2. Drizzle the pineapple with the rum and flambé (beware of the flames!) .
    6. Serve the pineapple slices, drizzle with the coconut cream and sprinkle the Thaï basil leaves.
