Gluten-free blueberries pancakes a la Plancha® griddle

INGREDIENTS

  • 2 eggs
  • 1 tbsp or 15 g powdered sugar
  • 1 cup or 120 g of cornstarch
  • 1 tsp baking powder
  • 1 yoghurt
  • 1 tbsp or 20 g melted butter
  • 3/4 cup or 125 g blueberries
  • 4 tbsp or 60 g maple syrup

 

INSTRUCTIONS

  1. In a salad bowl, whip the eggs and sugar. Add the cornstarch, yeast, yoghurt and butter. Mix well. Add the blueberries and mix delicately.
  2. Heat the griddle and cook for 3 to 4 minutes on each side.
  3. Serve the pancakes on plates and drizzle with the maple syrup.

 

TIPS

Test other flavors by varying the fruits : blackberries, redcurrants, raspberries...
