Apple, Cider and Maple Parfait

Ingredients

  • 5 apples, diced
  • 15 ml (1 tbsp) butter
  • 1 pinch salt
  • 125 ml (½ cup) ice cider
  • 125 ml (½ cup) + 60 ml (14 cup) maple syrup
  • 125 ml (½ cup) coarsely chopped pecans
  • 125 ml (½ cup) coarsely chopped pretzels
  • 1 907 g jar Mediterranean plain Greek yogurt

 

Preparation :

  1. Heat the Eno griddle over medium-high heat.
  2. Melt the butter and sauté the apples.
    Add the pinch of salt.
  3. Pour over the apples, cider and syrup. Collect all the juice in the collection trays and set aside in a cool place.
  4. Dry roast the pecans for a few minutes, stirring frequently. Add the pretzels and the 60 ml of maple syrup. Mix well and remove from the heat.
  5. Mix the reserved liquid into the yogurt.
  6. Assemble the verrines with yogurt on the bottom, apples, more yogurt and the crunchy mixture.
  7. Garnish with a whole pretzel.
