What is the Maillard reaction?
The Maillard reaction is the result of proper cooking, which, through the chemical interactions of the food and the action of heat, develops the aromas, taste, crispness, texture and color of the food!
Unlike the BBQ, where food is in direct contact with the flames, the plancha allows you to better control the cooking process, and therefore the Maillard reaction. This reaction produces a brown coloring to the food, like a kind of crust, preventing the juices from meat or fish, for example, from escaping. As a result, the core of the food remains juicy and the texture tender!
Well-known to chefs, it allows them to create tasty dishes that are perfectly cooked through.
Follow our tips for a good Maillard reaction
- Preheat your plancha for 5 to 10 minutes, so that the griddle is nice and hot, without systematically adding fat.
- Sear your food on the hot griddle and cook for a few minutes, without turning, until a caramelized coating forms. This is the famous Maillard reaction.
- Be patient before turning. It's the key to plancha cooking!
